Creamy Mushroom, Lentil, and Hemp Pasta! 🍄🌱 Recipe by @sobeautifullyreal ✨
Approx 250g of your fave pasta, cooked via packet⠀
2 tbsp vegan butter⠀
1 red onion, finely chopped⠀
2 cloves garlic, minced⠀
2-3 cups button mushrooms, sliced⠀
1 can lentils, drained⠀
1/2 cup hemp seeds⠀
1/2 cup veggie stock⠀
1/2 cup tahini ⠀
1/2 cup coconut milk⠀
1 tsp salt⠀
1/4 tsp black pepper ⠀
1 tbsp onion powder⠀
1 tbsp maple syrup or coconut nectar⠀
Juice 1/2 lemon ⠀
Parsley to garnish ⠀
1 tsp hemp oil to garnish⠀
1. Sauté the onion in vegan butter until translucent.⠀
2. Add the garlic & onion to the pan and sauté until mushrooms are golden brown.⠀
3. Add the lentils, hemp seed, veggie stock, coconut cream, tahini, salt, onion powder, pepper, maple & lemon. Stir until well combined. ⠀
4. Add the cooked pasta to the pan and stir until well combined. Add a splash more liquid if you’d like the sauce thinner (will depend how thin or thick your tahini is)⠀
Season to taste & serve with fresh parsley & hemp oil. Enjoy!

👉🏻“You should be consuming around 25-30 different vegetables and fruits for a Week!”. I am not certain if this is correct however I am certain that you should definitely eat your veggies!!! This is such an interesting topic for me! The first time I heard this on a podcast the doctor was saying consume at least 25-30 different vegetables for just one Week. When I started counting the amount of veggies (including fruits) I reached at 27! Playing the eat your veggies game like cows 🐄.⠀

⬇️Here are 3 tips how you can incorporate veggies into your days!⠀
1️⃣ Make a shake!⠀
I used to hate celery stalk and now I can’t live without it! One day I decided to add it in my smoothies! After a while my tastebuds started loving this flavor! And now I not only add it in my smoothies, I can even eat it raw just like that as a snack! Take a look at my story for my favorite green juice recipe!⠀
2️⃣ Eat the frog first thing in the morning”!⠀
If you are not a fan of veggies, eating them first thing in the morning with your breakfast will be a nice start for you! You won’t have to think of it for the rest of the day because you’re already done!⠀
3️⃣ Make a challenge!⠀
Write down and challenge yourself each Week to eat different kind of veggies! Try to make new recipes with different veggies. This will not only help you getting different benefits from different foods, it’ll also help you get more creative in the kitchen which is fun!⠀
