I’m working on some healthier brownie recipes this week & was wondering what you would like to see? A raw brownie, a flourless brownie, a sweet potato brownie, or a chickpea / black bean brownie? 🤔

These brownies are a chocolate mint version of my ooey gooey brownie recipe! And I just doubled the recipe to fill out a larger pan. 💛

Ingredients:
2/3 Cup + 3 Tbsp Melted Pumpkin Seed Butter
3 Chia Eggs
1 /2 cup & 2 Tbsp Cup Maple Syrup
2/3 Cup Melted Coconut Oil
1 3/4 Cup Cacao Powder
1 1/2 Cup Coconut Sugar
2/3 Cup Sprouted Brown Rice Flour
1 1/2 Tsp Sea Salt
1/2 Tbsp Lemon Juice
2 Tsp Baking Powder
1 Tsp Baking Soda
4 Tsp Peppermint Oil

Directions:
1. Preheat Oven to 350 Degrees F & really grease a baking dish! 
2. Prepare chia eggs and set aside.
3. Cream together ps butter, vanilla, lemon juice, coconut oil, maple syrup, peppermint oil and coconut sugar.
4. Whisk in chia eggs.
5. Slowly add in dry ingredients.
6. Combine until smooth.
7. Optional... fold in vegan choco chunks or choco chips.
8. Scoop in baking dish & smoothen with a spatula.
9. Bake for about 30 minutes. This will depend on your dish! 
10. Remove from oven & let cool for a few hours in the pan.
11. Eat on it’s own or lather with icing / vegan butter cream (the recipe is the same as my other brownie butter cream + 1 tsp peppermint oil)

vegan spaghetti squash pad thai, i love you so 💕 i am pad thai obsessed! this vegan pad thai sauce is super simple and satisfies those takeout cravings. i loaded mine with bell peppers, carrots, and crispy skillet organic tofu- but you can play with whatever veggies and protein you have on hand! recipe below

for the sauce:
1/3 cup vegetable stock 
1/4 cup peanut butter 
2 tbsp gluten free soy sauce
1 tbsp rice vinegar
1 tbsp coconut sugar 
2 tsp siracha (more for spicier) 
1/2 tsp minced ginger
1/8 tsp garlic powder 
juice of 1 lime 
____________________________
for the full meal:
1 spaghetti squash, cooked at 375F until tender enough to shred with a fork (25-35 minutes) 
1 large bell pepper, thinly sliced 
5 green onions 
3 large carrots, shredded 
1 package of tofu, thinly sliced and pre cooked on a skillet in avocado oil

1. whisk all sauce ingredients until well combined. you can prep the sauce ahead of time if needed and store it in the refrigerator.
2. in a skillet, heat 1 tsp of avocado oil. stir in 1 thinly slice large bell pepper (sub another veggie here if you’d like). cook until soft, about 5 minutes. 
3. stir in green onion, then stir in spaghetti squash and tofu (or another protein). 4. stir in the sauce and toss everything to combine, then let everything cook and soak up the sauce for 5-7 minutes. stir in carrots and serve..

This ✨Vegan Alfredo Pasta✨ is made with my creamy cauliflower Alfredo sauce that is completely #dairyfree and #nutfree !

INGREDIENTS

2 cups cooked chickpeas, patted dry
2 teaspoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt, to taste
16 ounces your favorite pasta
1 1/2 cups peas, frozen or fresh
2 cups Creamy Cauliflower Alfredo Sauce
Fresh parsley for garnish, if desired
INSTRUCTIONS

Pre-heat oven to 400 degrees F.  Place chickpeas on a large baking sheet and toss with olive oil, garlic powder, paprika and salt.  Bake chickpeas until crispy, 15-20 minutes, stirring once.
Heat a large pot of water over high heat and add pasta.  Add the peas to the boiling water when pasta is almost finished cooking.  Drain pasta and add back to the pot.
Stir in 2 cups of Creamy Cauliflower Alfredo Sauce and add salt and pepper, to taste.  Enjoy immediately and top each separate portion with desired amount of crispy chickpeas.  Garnish with fresh parsley, if desired.

I have a few pesto recipe on the blog but they’re all variations (arugula, kale, broccoli) but I don’t think I have your traditional pesto on the blog so here’s how I make mine vegan & nut free!
2 cups basil (packed)
1/3 cup hemp seeds 
1/4 cup nutritional yeast 
1/3 cup olive oil 
1-2 cloves of garlic 
Juice of 1 lemon 
Salt & pepper to taste. 
Blend in food processor or blender (I used my nutribullet) 
You can adjust your seasonings to your liking. For instance 1 lemon may seem like a lot to people but I love lemon juice. Don’t want to use oil? Try a ripened avocado. Pesto is fun to play around with and the combos are endless. This is just my take on a basil pesto.

A new MATCHA cookie was born 🍵🙌🏻Since my matcha cookie recipe a few posts back was so popular, I decided to test a couple diff versions of it to be accessible to almost all! First, I tested the original recipe using a flax egg to make it #vegan, and it worked just fine! Just mix 1 tbsp flaxmeal in 2.5 tbsp water and let thicken for 10 min in fridge. Texture is different, but that’s to be expected. Still delicious! Just follow original recipe exactly using the flax egg to make it vegan friendly 😊💚 .

So then, I used the last of my @matcha_maiden to make it nut-free and I actually like it better surprisingly!! I used coconut flour for this version and I wanted to make them fluffier so I used baking powder alone instead of a mixture of that and baking soda. So without futher ado, here is the nut-free, grain free version of my matcha cookie! I call these guys fluffers, look how pillowy they are 😍💯 .

INGREDIENTS:
1/2 tahini 
1/2 cup maple syrup 
2 eggs 
1/4 tsp vanilla 
1/2 cup coconut flour( not packed in) 
2 tsp baking powder 
2 tsp @matcha_maiden matcha powder .

DIRECTIONS: preheat oven to 350. Mix all wet ingredients then add in dry ingredients. Refrigerate for 15-30 min(prevents spreading) bake for 10 min. ENJOY. DEVOUR. Dip in a matcha latte if your heart desires 😂👌🏻 .

First, I tested the original recipe using a flax egg to make it #vegan , and it worked just fine! Just mix 1 tbsp flaxmeal in 2.5 tbsp water and let thicken for 10 min in fridge. So then, I used the last of my @matcha_maiden to make it nut-free and I actually like it better surprisingly!! I used coconut flour for this version and I wanted to make them fluffier so I used baking powder alone instead of a mixture of that and baking soda. So without futher ado, here is the nut-free, grain free version of my matcha cookie! I call these guys fluffers, look how pillowy they are 😍💯 . . INGREDIENTS: 1/2 tahini 1/2 cup maple syrup 2 eggs 1/4 tsp vanilla 1/2 cup coconut flour( not packed in) 2 tsp baking powder 2 tsp @matcha_maiden matcha powder . . DIRECTIONS: preheat oven to 350. Mix all wet ingredients then add in dry ingredients. Refrigerate for 15-30 min(prevents spreading) bake for 10 min. ENJOY. DEVOUR.
