🌱😍 Mini Hasselback Potatoes! 📷 by @hannah__chia 🚨🚨Recipe: preheat oven to 425F (220C), cut mini potatoes hasselback style (make thin, deep slices, stopping before you get to the bottom— i like to lay a pair of chopsticks at the base of the potato for this purpose), toss with salt and pepper, and bake for 25 minutes. remove from oven and drizzle the fanned-out slices with more olive oil and fresh rosemary/thyme/parsley if desired and roast for another 25-30 minutes until tender and golden brown.

🌱😍 Crispy Curried Chickpeas! 📷 by @nourishingalex 🚨🚨Recipe: 𝐂𝐫𝐢𝐬𝐩𝐲 𝐁𝐚𝐤𝐞𝐝 𝐂𝐮𝐫𝐫𝐢𝐞𝐝 𝐂𝐡𝐢𝐜𝐤𝐩𝐞𝐚𝐬⁣ • 400g can chickpeas, drained & rinsed ⁣
• 1-2tsp curry powder (depends on how much you like)⁣

𝐌𝐞𝐭𝐡𝐨𝐝 ⁣
1. preheat oven to 200C/180C fan/400F/gas 6, line a baking tray with non stick baking parchment.⁣
⁣
2. After draining and rinsing the chickpeas, pat them dry with a clean tea towel, then add them to a bowl.⁣
⁣
3. sprinkle in the curry powder and stir until the curry powder has coated all of the chickpeas.⁣
⁣
4. Bake them in the oven for 15 - 20 minutes , turning them over halfway through cooking time!⁣ .

Ingredients

Dough:

1 kg potatoes 
80 g white rice flour (1/2 cup)

40 g cornstarch or tapioca flour (1/3 cup)

salt, pepper, nutmeg (to taste)

Filling:

250 g mushrooms, sliced (about 3 cups)

1/2 of a zucchini, diced

1 onion, chopped

1 bell pepper, diced

2 cloves of garlic, minced

salt & pepper to taste

spice mix: 1 tsp Italian spice blend, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp cumin, 1/4 red pepper flakes

Additional ingredients:

oil for frying

vegan cheese to taste (optional)

Instructions

Dough:

Peel potatoes, cut into small pieces and cook in salted water for about 20 minutes.

Season with salt, pepper, and nutmeg and mash them with a potato masher. (Please do not use a food processor, otherwise, the mashed potatoes will be sticky). Allow the mashed potatoes to cool (in the meantime you can prepare the filling), then add flour and cornstarch and mix well with a spoon or your hands.

Filling:

Chop the veggies, fry the onion in a pan with a little bit oil for about 3-4 minutes, add the mushrooms, garlic, and also the diced peppers and the zucchini. Sauté everything for a couple of minutes, season with salt, pepper, and the spice mix.

Split the dough into 8 parts (about 1/2 cup or 120 g each). Form into balls, make a well in the middle and add about one and a half tablespoons of the filling. You can also add some vegan cheese in addition. Carefully

Heat approximately 2 tablespoons of oil in a pan and fry the potato cakes at medium heat until golden brown on both sides. They will be crunchy on the outside and soft on the inside. If you want them to be slightly more crunchy, you can bake them additionally for about 20 minutes at 375 degrees Fahrenheit in the oven. Enjoy! . ...

It’s the last week of summer with my baby girl Olivia before she starts back at school next Monday. So, we are living it up this week and I made her favorite CHOCOLATE WAFFLES WITH CHOCOLATE SAUCE and strawberries for breakfast today! This summer has been so amazing with her. It’s been so special and fun and lots of memories made. ”UN described the livestock sector as 'one of the most significant contributors to the most serious environmental problems, at every scale from local to global,' but has anything been done in the subsequent decade to address such a grave warning? Animal agriculture is responsible for at least 14.5% of global greenhouse gas emissions, more than all transport combined. It must not continue to be shielded from scrutiny and afforded protected status given the severity of the implications. It's not just a climate issue. One in nine of the world's population - almost 800 million people - go hungry, yet enough grain to feed up to 3.5 billion people is fed to livestock. Deforestation is also occurring at an alarming rate with the World Bank estimating that animal agriculture is responsible for up to 91% of Amazon destruction. Nor are the problems a result of just meat production. The dairy industry, far from its perception as an innocuous by-product, is every bit as destructive, alone accounting for roughly 4% of global greenhouse gas emissions.
